One of the things that has always fascinated me about whisky is the simplicity of the spirit product constituted by only water, barley and yeast. The significance of wood management pertinent to casks cannot be underplayed but neither should the significance of the barley. Different varieties of barley add different layers of flavour, complexity and texture. In choosing the name Eorna Oir (Scots Gaelic for Golden Barley) I wanted to express the importance of the barley and its impact on the finished liquid. For my first three single cask releases I have carefully selected from the regions of Speyside, Highlands and Islay. These whiskies have been crafted to define both regional variation and intensity.
